Peach Cobbler

A delicious Peach Cobbler made from scratch. Fresh, juicy peaches covered in a simple soft rise-to-the-top topping. The ideal summer dessert, served with a scoop of vanilla ice cream of course!

Ingredients

  • 4 cups peaches sliced
  • 1/4 cup brown sugar packed
  • 1/4 teaspoon cinnamon ground
  • 1 tablespoon lemon juice
  • 2 teaspoon cornstarch

Batter

  • 1 cup all-purpose flour all purpose
  • 2 teaspoon baking powder
  • 3/4 cup sugar
  • 1/4 teaspoon salt
  • 3/4 cup milk
  • 1/2 cup butter cold, cubed

Instructions

  • Preheat the oven to 425F.
  • Mix the peaches, brown sugar, cinnamon, lemon juice, cornstarch in a large saucepan. Cook on medium heat for about 3 minutes, until the peaches soften a bit and become juicier.
  • Whisk the flour, baking powder, sugar, and salt in a bowl. Whisk in the milk.
  • Add the cubed butter to a 9x13-inch baking sheet, spread throught. Place it in the oven while it preheats until the butter melts. Pour the batter evenly over the bottom. Pour the peach mixture evenly over the batter. Transfer the baking dish back to the oven and bake for 35-45 minutes, or until the top is golden brown.
  • Serve warm with a scoop of vanilla ice cream.

Notes

  1. Stored in an airtight container, your cobbler will last 4-5 days in the fridge.
