Slow Cooker Chicken Fajitas

Colorful bell peppers, onions, tomatoes, and green chiles along with lime juice and lots of fajita seasoning is layered between lean chicken breasts to make these incredible Slow Cooker Chicken Fajitas. It’s an easy 7-ingredient recipe that cooks right in your crockpot and makes the perfect weeknight meal!

Ingredients

  • 1 medium red bell pepper sliced
  • 1 medium green bell pepper sliced
  • 1 medium yellow bell pepper sliced
  • 1 large onion sliced
  • 3 large chicken breasts boneless and skinless
  • 2 tablespoons fajita seasoning
  • 10 ounce diced tomatoes 1 small can
  • 4 ounce green chiles 1 small can
  • 1 lime juiced
  • 8 tortillas for serving

Instructions

  • Add half the bell peppers, onion to your slow cooker. Place the chicken breasts on top. Season with 1 tablespoon of the fajita seasoning.
  • Next layer with diced tomatoes, green chiles and remaining bell peppers and onion. Season with remaining fajita seasoning and juice from the lime.
  • Cover the slow cooker and cook on HIGH for 3 to 4 hours or LOW for 6 to 8 hours.
  • Remove the chicken from the slow cooker and cut into strips or shred with a couple forks. Return the sliced chicken to the slow cooker and toss with the other ingredients.
  • Assemble fajitas on tortillas with your favorite toppings like sour cream, guacamole, or cheese.

Notes

  1. Fresh lime is a must. For the best results use fresh lime juice. It not only adds better flavor but also helps to make the chicken more tender. 
  2. Keep the chicken warm. Some slow cookers have timers which is a wonderful thing! But for food safety make sure your chicken doesn’t cool off and stay in the crockpot at room temperature for too long once it’s cooked.
  3. Make it spicy. You can easily make spicy slow cooker chicken fajitas if you like by adding a sliced jalapeno in with the bell peppers and onions. 
  4. These crockpot chicken fajitas will keep in the fridge for about 4 days or in the freezer for up to 3 months when stored in an airtight container.
