Ingredients

Beef Marinade

  • 1 pound flank steak or sirloin steak, thinly sliced across the grain
  • 1 tablespoon soy sauce low sodium
  • ½ teaspoon baking soda
  • 1 tablespoon cornstarch

Stir Fry Sauce

  • 2 tablespoons oyster sauce
  • 2 tablespoons Shaoxing wine Chinese cooking wine
  • 2 tablespoons soy sauce
  • 3 tablespoons honey
  • 2 tablespoons water
  • 1 teaspoon black pepper crushed

Stir Fry

  • 2 tablespoons vegetable oil
  • 3 cloves garlic roughly chopped
  • 2 inch piece ginger peeled and julienned
  • 3 green onions cut into 3 inch pieces

Instructions

  • Combine the beef with the rest of the marinade ingredients together, mix well and set aside for 5 minutes.
  • In a small bowl, combine all the stir fry sauce ingredients together.
  • Heat the vegetable oil in a large skillet over high heat. Add the garlic and ginger and stir fry for 10 seconds, then spread the beef over the entire surface of the skillet. Sear for 1 minute without touching the beef, then toss it and sear for another minute or 2 until the beef is cooked.
  • Add the green onions and the stir fry sauce to the skillet and toss everything together. Cook for another 10 seconds then remove from heat.
  • Serve over cooked rice.

Notes

  1. No wok needed. A wok is not required to make Chinese sizzling beef. You can use a large nonstick skillet with a surface big enough to stir fry all the ingredients properly.
  2. Cook the beef in batches. If you have a small pan you will need to cook the beef in batches for it to properly saute. It really needs to sear well for the best flavor.
  3. Remove from the heat. Once the dish is done, remove it from the heat right away so it doesn’t keep cooking. You don’t want to overcook your beef.
  4. Leftovers will keep in the fridge for up to 4 days. To reheat, simply put them in the microwave for a few minutes on medium power or in a skillet on the stove. You can also freeze them for up to 3 months in an airtight container or sealed freezer bag.
