Ingredients

  • 1 pound salted roasted peanuts
  • 4 cups chocolate chips semi-sweet
  • 4 cups white chocolate chips or melting chocolate
  • 2 teaspoons vanilla extract

Instructions

  • Place the peanuts in your slow cooker then top with chocolate chips and white chocolate chips.
  • Place the lid on the slow cooker and cook on low for 2 hours.
  • Add the vanilla extract and stir well until smooth.
  • Drop 2 tablespoons of chocolate mixture into cupcake liners. You can also drop tablespoonfuls onto a baking sheet lined with parchment paper, about 2 inches apart.
  • Transfer the candy to the refrigerator to fully harden before removing the liners to serve.

Notes

  1. Use white chocolate or melting chocolate. You must use white chocolate or melting chocolate along with regular chocolate chips for the candy to properly come together. They both have a lower melting point.
  2. Slow cook on low. Do not try to make this recipe in half the time by just melting the chocolate on Hi. You will most likely just end up with burnt chocolate candy.
  3. Use a cookie scoop. You can use a small ice cream scoop or a large cookie scoop to portion out the candy mixture. It’s a great way to make all the clusters exactly the same size.
  4. This candy will keep at room temperature in a cool place for about a week or in the fridge for several weeks in an airtight container. You can also freeze it for up to 5 months. However, if frozen, let it thaw out first to prevent it from breaking your teeth!
