  • Spoon about a tablespoon of caramel sauce onto each cookie spreading it so that it covers most of the cookie. Transfer the cookies with caramel to the fridge for about 15 minutes.

  • Spread about a tablespoon of melted chocolate onto each cookie. Let the chocolate layer cool and set in the fridge for another 15 minutes before serving.

Notes

  1. Room temperature butter. The unsalted butter must be at room temperature to make the cookie dough. Cold butter will not cream together properly with the sugar.
  2. Chill the dough. If the cookie dough is too warm to roll out and cut into circles then you will need to put it in the fridge or freezer to chill for a bit so that it can firm up.
  3. Let the layers set. The caramel and melted chocolate can not be spread on the cookies at the same time. You have to let the caramel layer fully set first before adding the chocolate.
  4. These Twix cookies are best stored in the fridge in an airtight container or wrapped in plastic wrap for up to a week.
