Twix Cookies
Inspired by the iconic candy bar, these scrumptious Twix Cookies are amazing! Made with a 5-ingredient buttery shortbread cookie base and then topped with some gooey caramel and melted chocolate, these sweet treats just melt in your mouth!

- 1½ cup butter
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- ¼ teaspoon salt
Topping
- 1 cup caramel sauce
- 1 cup chocolate chips melted
Preheat the oven to 350°F.
Add the butter to a large bowl and blend it until smooth using an electric mixer set at medium speed for about 30 seconds. Add the vanilla extract and blend until incorporated.
Add the icing sugar and continue mixing until well incorporated. Scrape down the sides of the bowl and combine thoroughly. Add flour, salt, and mix at low speed until well blended. The mixture will be crumbled and soft.
Roll out the dough onto a clean work surface to ¼ to ½ - inch thickness. Use a 2-inch cookie cutter to cut out circles. Transfer circles to an ungreased baking sheet.
Transfer the baking sheet to the oven and bake for 10 to 12 minutes, until cookies are no longer glossy.
Allow to cool for 5 minutes on the baking pan then transfer to a cooling rack to cool completely.
Spoon about a tablespoon of caramel sauce onto each cookie spreading it so that it covers most of the cookie. Transfer the cookies with caramel to the fridge for about 15 minutes.
Spread about a tablespoon of melted chocolate onto each cookie. Let the chocolate layer cool and set in the fridge for another 15 minutes before serving.
- Room temperature butter. The unsalted butter must be at room temperature to make the cookie dough. Cold butter will not cream together properly with the sugar.
- Chill the dough. If the cookie dough is too warm to roll out and cut into circles then you will need to put it in the fridge or freezer to chill for a bit so that it can firm up.
- Let the layers set. The caramel and melted chocolate can not be spread on the cookies at the same time. You have to let the caramel layer fully set first before adding the chocolate.
- These Twix cookies are best stored in the fridge in an airtight container or wrapped in plastic wrap for up to a week.
