Ingredients

  • 1/4 cup olive oil
  • 1/4 cup lime juice from about 2 limes
  • 1/4 cup cilantro fresh, chopped
  • 4 cloves garlic minced
  • 1/2 teaspoon cumin ground
  • 1/2 teaspoon red chili flakes or to taste
  • 1/2 teaspoon salt or to taste
  • 1/2 teaspoon pepper ground
  • 4 chicken breasts boneless and skinless, boneless and skinless thighs can be used as well
  • 1 tablespoon olive oil

Instructions

  • Combine the olive oil, lime juice, cilantro, minced garlic, cumin, chili flakes, salt and pepper in a large bowl. Add chicken and toss to coat. Let marinate in fridge 30 minutes and up to 2 hours. 
  • Heat a skillet over medium-high heat with the olive oil. Remove the chicken from the fridge and place in the skillet.
  • Cook the chicken until well-browned on both sides and cooked through, about 4-6 minutes per side, or until the chicken reaches 165 degrees F internal temperature.
  • Allow to rest for 5 minutes before slicing and serving.

Notes

Store this chicken in an airtight container in the fridge for 3 - 4 days.
This cilantro lime chicken is a simple but flavorful meal to have on hand in the freezer.
Whisk marinade together as instructed above. Add chicken breast and marinade to a freezer bag. Seal and put baggie in the freezer and freeze up to 6 months. When you want to enjoy this special meal, just thaw in the fridge overnight and cook the next day as directed.
