Cilantro Lime Chicken
This Cilantro Lime Chicken recipe will quickly become one of your favorite dinners! Made with just a handful of inexpensive ingredients, this versatile recipe is perfect for your weekly rotation.
- 1/4 cup olive oil
- 1/4 cup lime juice from about 2 limes
- 1/4 cup cilantro fresh, chopped
- 4 cloves garlic minced
- 1/2 tsp cumin ground
- 1/2 tsp red chili flakes or to taste
- 1/2 tsp salt or to taste
- 1/2 tsp pepper ground
- 4 chicken breasts boneless and skinless, boneless and skinless thighs can be used as well
- 1 tbsp olive oil
Combine the olive oil, lime juice, cilantro, minced garlic, cumin, chili flakes, salt and pepper in a large bowl. Add chicken and toss to coat. Let marinate in fridge 30 minutes and up to 2 hours.
Heat a skillet over medium-high heat with the olive oil. Remove the chicken from the fridge and place in the skillet.
Cook the chicken until well-browned on both sides and cooked through, about 4-6 minutes per side, or until the chicken reaches 165 degrees F internal temperature.
Allow to rest for 5 minutes before slicing and serving.
Store this chicken in an airtight container in the fridge for 3 - 4 days.
This cilantro lime chicken is a simple but flavorful meal to have on hand in the freezer.
Whisk marinade together as instructed above. Add chicken breast and marinade to a freezer bag. Seal and put baggie in the freezer and freeze up to 6 months. When you want to enjoy this special meal, just thaw in the fridge overnight and cook the next day as directed.
