Sausage Tortellini Soup
I never turn down the opportunity to make a homemade soup, and you shouldn't either! This Sausage Tortellini Soup is a simple hearty comfort food; tomato base, loaded with fresh veggies, Italian seasoning, and deliciously tender sausage. Need I say more?

- 1 tablespoon olive oil
- 1 pound Italian sausage sweet or spicy, casings removed
- 1 large onion chopped
- 2 medium carrots peeled and chopped
- 2 stalks celery chopped
- 3 cloves garlic minced
- 2 tablespoon tomato paste
- 1 teaspoon Italian seasoning
- 6 cups chicken broth low sodium
- 28 ounce diced tomatoes 1 large can
- 9 ounce cheese tortellini 1 package
- 3 cups baby spinach
- 1 teaspoon salt or to taste
- 1/2 teaspoon pepper or to taste
Heat the olive oil in a large Dutch oven over medium-hight heat. Add the sausage and break it up with a spoon. Cook for about 5 minutes.
Add the onion, carrots and celery and saute for about 5 minutes or until the onion and veggies soften. Stir in the garlic and cook for another 30 seconds.
Stir in the tomato paste then add the Italian seasoning. Add the chicken broth, diced tomatoes and bring to a boil.
Add the tortellini and cook for about 5 minutes or until cooked through. Stir in the spinach and cook for another 1 minute. Season with salt and pepper.
- Sausage tortellini soup will last in the fridge up to 4 days when stored in an airtight, sealed container.
- You can definitely freeze this soup as well. Store in 1 large airtight container or in individual containers and it will last 2 - 3 months in the freezer.
