Crispy Smashed Potatoes

- 2 lbs baby potatoes
- 4 tbsp butter unsalted, melted
- 1 tsp Italian seasoning
- 1/2 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp salt or to taste
- 1/4 tsp pepper or to taste
Add the potatoes to a large pot and cover them with cold water. Bring the water to a boil and cook them for 20-30 minutes, or until fork tender. Drain.
Preheat the oven to 450F.
Spray a baking sheet lightly with cooking spray. Place the potatoes on the sheet and using a masher or fork, gently smash each potato until flat while still in one piece.
Whisk the butter, Italian seasoning, garlic powder, onion powder, salt, and pepper together. Use a spoon to drizzle the mixture over all the potatoes.
Roast for 15-20 minutes until golden brown and crisped.
