Ingredients

  • 2 pounds baby potatoes
  • 4 tablespoon butter unsalted, melted
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon salt or to taste
  • ¼ teaspoon pepper or to taste

Instructions

  • Add the potatoes to a large pot and cover them with cold water. Bring the water to a boil and cook them for 20-30 minutes, or until fork tender. Drain.
  • Preheat the oven to 450°F.
  • Spray a baking sheet lightly with cooking spray. Place the potatoes on the sheet and using a masher or fork, gently smash each potato until flat while still in one piece.
  • Whisk the butter, Italian seasoning, garlic powder, onion powder, salt, and pepper together. Use a spoon to drizzle the mixture over all the potatoes.
  • Roast for 15-20 minutes until golden brown and crisped.

Notes

  1. Properly stored in an airtight container, cooked potatoes will last for 3 to 5 days in your refrigerator.
