Air Fryer Vegetables

Learn how to easily make Air Fryer Vegetables. This has to be the absolutely best way to cook crunchy cauliflower, sweet zucchini, colorful peppers, and earthy mushrooms. In only 20 minutes, your eating these delicious veggies!

Ingredients

  • 1 bell pepper any color
  • 1 cup mushrooms white or cremini, halved
  • 1 cup cauliflower cut into florets
  • 1 medium zucchini cut into ½ inch moons
  • 3 cloves garlic
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • salt and pepper to taste

Instructions

  • Prepare the Vegetables: Chop vegetables, and in a large bowl, toss all the ingredients together.
  • Preheat Oven: Preheat the air fryer to 380°F.
  • Cook: Place the veggies in the air fryer, spread out. Cook for 10-12 minutes, tossing them half way through.

Notes

  1. If using frozen veggies, you'll have to add a few minutes to the cooking time to account for the time required to thaw out the veggies during the cooking process. Also make sure to give frozen vegetables more room between them to allow the water to evaporate so they can become perfectly crispy.
  2. Food will cook best in an air fryer if you don't overcrowd the basket.
  3. Flipping the food halfway through, is important for even cooking.
  4. Store cooked vegetables in the fridge for up to 2-3 days. Freezing cooked vegetables are typically not recommended.
