Watermelon Feta Salad
This Watermelon Feta Salad is a refreshing summer treat you can quickly whip up and enjoy with little effort. The fresh watermelon cubes and cucumber slices, mixed together with crumbled salty feta cheese and red wine vinegar dressing makes this salad a total win for any BBQ or family gathering.

- ¼ cup olive oil
- 1 tablespoon red wine vinegar
- ½ teaspoon salt
- 3 cups watermelon seedless, cut in cubes
- 1 cup English cucumber seeded and chopped
- 1 cup feta cheese crumbled
- ½ medium red onion thinly sliced
- ½ cup fresh mint chopped
Prep dressing: In a small bowl whisk together the olive oil, red wine vinegar and salt.
Mix and serve: In a large serving bowl combine the rest of the ingredients together and pour the dressing over. Toss well until combined.
- While olive oil goes amazing in salads, there may be a few of you who might not like the bolder flavor of this oil so you can substitute it with either sunflower or safflower oil.
- Crumbled feta cheese is amazing, but if you wish to substitute it with something else aim for a salty yet soft cheese such as ricotta, goat cheese or queso fresco. These types will blend very well with the rest of your ingredients.
- If you can't find any red wine vinegar, you can easily substitute it with white wine vinegar, apple cider vinegar or even champagne vinegar. While balsamic vinegar is usually good for salads, it would be a bit too bold for this type of salad. Another great substitute if you wish to keep the vinegar out completely is squeezed lemon or lime juice.
