Easy Oven Roasted Potatoes

These Easy Oven Roasted Potatoes are extremely easy to make and the perfect side dish. These Roasted Potatoes are also very versatile, use your favorite herbs or seasonings and roast them to a crispy perfection.

  • 3 pound red skinned potatoes
  • 1/4 cup olive oil
  • 2 tablespoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt or to taste
  • 1/2 teaspoon pepper or to taste


  • Preheat your oven to 425 F degrees (220 C degrees). Line a baking sheet with parchment paper or a silpat.
  • Wash and scrub the potatoes but do not peel them. Cut the potatoes into bite sized cubes.
  • Toss the potatoes with the olive oil and seasoning. 
  • Place onto the prepared baking sheet. Bake for 35 to 45 minutes or until potatoes are golden brown, crispy and cooked through.


  1. Any potatoes are great for roasting!
  2. Leftovers: Place the potatoes in a plastic container or resealable plastic bag. Store them in the refrigerator for 3 to 5 days. To reheat them, you can use the microwave, but they will lose their crispiness. If you want to keep them crispy, place them on a baking sheet and reheat them in the oven at 425 F degrees for about 10 minutes or until heated through.
