Crockpot Cilantro Lime Chicken

This tender and juicy Crockpot Cilantro Lime Chicken is so delicious! It’s seasoned with the perfect balance of lime, garlic, and fresh cilantro with just a touch of cumin to add a layer of flavor and jalapeno for some mild heat. This chicken is tasty and taco ready!

Ingredients

  • 2 pounds chicken breasts skinless and boneless
  • ¼ cup olive oil
  • ¼ cup chicken broth low sodium
  • 3 tablespoons lime juice
  • 3 cloves garlic
  • 1 teaspoon ground cumin
  • ½ cup fresh cilantro chopped
  • ½ teaspoon salt
  • ½ teaspoon black pepper ground
  • 1 medium jalapeño seeded and sliced

Instructions

  • Place the chicken breasts in a single layer in your crockpot.
  • Add the remaining ingredients to a food processor or blender and blend until smooth. Pour over the chicken in the crockpot.
  • Cover and cook on LOW for 6 to 8 hours.
  • Shred the chicken right in the crockpot with two forks then toss around with the sauce.
  • Serve in tacos, burritos or with rice, corn and black beans.

Notes

  1. Puree the sauce well. For the best flavor make sure to blend all the sauce ingredients together well. You really want the chicken to be saturated in all those flavors. 
  2. Don’t overcook the chicken. This is a slow cooker meal, but that doesn’t mean you can just leave it in the crockpot forever. The chicken will turn to mush eventually.
  3. Add more peppers to spice it up. If you want to make it spicier you can either leave the seeds in the jalapeno or add more jalapeno to the recipe. Or better yet, do both! 
  4. You can store leftover crockpot cilantro lime chicken in an airtight container in the refrigerator for 3 to 5 days or in the freezer for up to 3 months! To reheat, just put it covered in the microwave for about 5 minutes on medium power.
