Apple Pie Baked Oatmeal

This yummy Apple Pie Baked Oatmeal is going to become your new favorite quick and easy breakfast on the run! It’s fresh apples and pecans baked together with a mixture of lightly sweetened oats and milk with a dash of cinnamon. Baked oatmeal is healthy, hearty, and so darn good!

Ingredients

  • 3 cups rolled oats
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • ¼ cup brown sugar packed
  • 2 cups milk
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 medium apples peeled, cored and diced small
  • 1 cup pecans chopped

Instructions

  • Preheat the oven to 375°F and grease a 9x13-inch baking dish with cooking spray.
  • In a large bowl, combine the rolled oats, baking powder, cinnamon, and salt together.
  • In another bowl, add the brown sugar, milk, eggs, vanilla extract and whisk well.
  • Add the wet mixture to the dry mixture and mix until well combined. Fold n the apples and pecans.
  • Pour the oat mixture into the prepared baking dish. Sprinkle with a few extra pecans over the top and a little brown sugar if preferred.
  • Transfer the pan to the oven and bake for about 45 minutes, uncovered, until golden brown.
  • Cool for 10 minutes in the pan before serving.

Notes

  1. Do not let the batter sit. You can’t make this batter ahead of time. The oats will soak up the moisture from the liquid. You need to make it and bake it right away.
  2. Fold in the apples. No, you can’t overmix the batter, but you can break up the apples. So gently blend them in so that they hold their shape.
  3. Let it cool. Wait the full 10 minutes before cutting into the apple pie baked oatmeal. It needs a few minutes to both cool and set.
  4. Leftover apple baked oatmeal will keep in the fridge for up to 4 days when stored in an airtight container. If you’d like to warm it, I recommend putting it in the oven at 300°F (150°C) for about 5 to 10 minutes or until warm. You can also put it in the microwave on medium power for a few minutes.
  5. It’s also possible to freeze baked oatmeal for about 3 months if you wrap it really well in plastic wrap. Then just allow it to thaw out at room temperature or in the fridge for a few hours before eating or reheating.
