Ingredients

  • 4 chicken breast boneless and skinless
  • salt and pepper to taste
  • 1 cup broccoli florets finely chopped
  • 1 cup cheddar cheese shredded
  • ½ cup cream cheese
  • 1 teaspoon garlic powder

Instructions

  • Season the chicken breasts with salt and pepper on both sides.
  • Using a sharp knife, cut a slit into the top part of each chicken breast, creating a pocket. Be careful not to cut all the way through the chicken.
  • In a bowl, mix together the chopped broccoli, cheddar cheese, cream cheese, and garlic powder. Season with a bit of salt and pepper if needed.
  • Stuff each chicken breast with the broccoli cheese mixture. Be careful not to overstuff as it may spill out during cooking. Secure the openings with toothpicks. This will help keep the stuffing inside the chicken while it's cooking.
  • Preheat your air fryer to 375°F (190°C).
  • Arrange the stuffed chicken breasts in a single layer in the air fryer basket. You may need to do this in batches, depending on the size of your air fryer.
  • Air fry the chicken breasts for about 20-25 minutes, or until the chicken is cooked through and no longer pink in the middle. The exact cooking time might vary depending on the size of your chicken breasts and your specific air fryer.
  • Allow the chicken to rest for a few minutes before removing the toothpicks and serving.

Notes

  1. Chicken Selection: Opt for chicken breasts of even thickness for consistent cooking. If they are particularly thick, you might need to adjust the cooking time.
  2. Broccoli Prep: Make sure to finely chop the broccoli florets to ensure they cook thoroughly and blend well with the cheeses.
  3. Cheese Variations: Feel free to experiment with different types of cheese; a mix of cheddar and mozzarella can also be delightful.
  4. Overstuffing: Be mindful not to overstuff the chicken breasts; it might cause the filling to spill out during cooking.
  5. Resting Time: Allow the chicken to rest for a few minutes after cooking; it helps the juices redistribute throughout the chicken, making it more flavorful and moist.
  6. Toothpick Reminder: Don’t forget to remove the toothpicks before serving.
