No Bake Chocolate Eclair Cake

There is something almost magical about what happens to a graham cracker when it spends the night in the fridge surrounded by cream filling. It goes in crunchy and comes out soft and tender and almost cakey, with a texture that genuinely resembles choux pastry in a way that makes no logical sense given that you used a box of crackers and didn’t turn the oven on once.

This is one of those desserts that sounds too simple to be good and then makes everyone at the table go quiet for a moment. The vanilla cream filling is light and silky. The ganache on top is glossy and rich. And the graham cracker layers in between have done their overnight transformation into something that tastes like it took considerably more effort than it did.

Make it the night before. Walk away. Come back to something that looks impressive and tastes even better.

The Overnight Magic

This deserves its own section because it’s the most important thing to understand about this recipe and also the most surprising thing about it.

Graham crackers are essentially a delivery vehicle. On their own they’re fine, slightly sweet, good with peanut butter, great for s’mores. But when you layer them between a moist cream filling and leave them in the fridge overnight something genuinely interesting happens. The moisture from the filling slowly softens the crackers from both sides. The crisp snapping texture disappears completely. What you get instead is a soft tender layer that honestly does a very convincing impression of eclair pastry.

This transformation takes time. 8 hours minimum, overnight is better. There are no shortcuts here and there’s no version of this recipe where you chill it for 2 hours and get the same result. The crackers need time to do their thing. Plan ahead, refrigerate overnight, and slice into it the next day when everything has had a chance to fully come together.

The Ganache

The ganache here is simple and it should be. Heavy cream heated until it just starts to steam and bubble at the edges, poured over chocolate chips, left alone for 2 minutes, then stirred until smooth and glossy. That’s it.

The ratio of cream to chocolate matters. This recipe uses enough cream to keep the ganache pourable and spreadable while still setting into a soft fudgy topping rather than a hard shell. Don’t reduce the cream thinking it’ll make the chocolate more intense. You’ll end up with something that sets too firm and cracks when you try to slice it, which is a very frustrating way to ruin the last step of an otherwise effortless dessert.

Pour it over the top layer of graham crackers and spread to cover completely. The ganache will look very liquid at this point and that’s fine. It firms up beautifully in the fridge overnight into that glossy finish that makes the whole thing look like you ordered it somewhere.

Ingredients in No Bake Chocolate Eclair Cake

Labeled ingredients for no bake chocolate eclair cake include pudding mix, graham crackers, milk, whipped topping, chocolate chips, and cream.
  • Instant vanilla pudding mix (2 boxes, 4.6 ounces each): The large boxes. This is important. The recipe uses 2 of the 4.6 ounce containers, not the smaller 3.4 ounce ones. The larger boxes give you the right amount of filling to get proper thick layers throughout the dish.
  • Cold milk (3 cups): Cold, not room temperature. Cold milk is what makes instant pudding set up properly. Room temperature milk gives you something thin and sad that won’t hold its layers.
  • Whipped topping (8 ounces, thawed): One standard container. Makes the filling light and airy rather than dense. Thaw it in the fridge overnight before you need it, not on the counter.
  • Graham crackers (1 box, 14.4 ounces): The magic ingredient. They come in as crackers and leave as something resembling pastry. Don’t use flavored graham crackers here, the honey variety is the classic choice and the one that works best.
  • Semisweet chocolate chips (1½ cups): The base of the ganache. Good quality chips make a noticeably better ganache. This is not the place for the bag that’s been open in the pantry for six months.
  • Heavy cream (1 cup): What turns the chocolate chips into ganache. Don’t substitute with half and half or milk, the fat content is what makes the ganache smooth and glossy and soft.

How to Make No Bake Chocolate Eclair Cake

Whipped topping is folded into prepared vanilla pudding until the no bake eclair cake filling becomes light and creamy.

Make the filling: Whisk the pudding mix and cold milk together for 2 minutes until it starts to thicken, then let it sit for 5 minutes to set up properly. Fold in the thawed whipped topping gently until smooth with no streaks. Don’t rush this fold, you want a uniform creamy filling not a marbled one.

Layer the crackers and filling: Line the bottom of a 9 by 13 inch dish with a single layer of graham crackers, breaking them to fit and cover the whole surface. Spread half the pudding mixture evenly over the crackers. Add a second layer of graham crackers, then spread the remaining pudding mixture over that. Finish with a third and final layer of graham crackers on top. At this point it looks like a very modest construction project and nothing like dessert. This is normal.

Make the ganache: Heat the heavy cream in a small saucepan over medium heat until it just starts to steam and bubble at the edges. Pour it over the chocolate chips in a bowl and leave it completely alone for 2 minutes. Then stir from the center outward until smooth and glossy. Don’t stir before the 2 minutes are up, the cream needs time to melt the chocolate from the outside in and stirring too early gives you a lumpy ganache instead of a silky one.

Top and refrigerate: Pour the ganache over the top layer of graham crackers and spread evenly to cover completely. Cover the dish and refrigerate for at least 8 hours or overnight. Do not rush this. Do not open the fridge every hour to check on it. Just leave it alone and go to bed.

Slice and serve: Slice into squares and serve cold. The transformation will be obvious the moment you cut into it. What went in as layers of crackers has become something soft and tender and genuinely reminiscent of an eclair. The ganache will be glossy and set and the whole thing will slice cleanly if you’ve chilled it long enough.

What to Serve With This

This dessert is perfectly complete on its own and needs nothing extra to be impressive. But if you want to dress it up a little, fresh strawberries or raspberries on the side add a brightness that cuts through the richness of the ganache beautifully. A few sliced bananas alongside work too, banana and chocolate eclair is a classic combination for a reason. Or just serve it as is with cold forks and no explanation needed.

The Stuff That Actually Makes a Difference

  • Use cold milk. Room temperature milk won’t set the instant pudding properly and you’ll end up with a filling that’s too thin to hold the layers.
  • Thaw the whipped topping in the fridge not on the counter. Counter thawing makes it watery and loses that light airy texture that makes the filling so good.
  • Use the right pudding box size. The recipe calls for the 4.6 ounce boxes, not the smaller 3.4 ounce ones. The right amount of filling is what gives you proper thick layers throughout the dish.
  • Don’t stir the ganache too soon. Two full minutes of leaving the cream and chocolate completely alone before stirring. The wait is what gives you a smooth glossy result.
  • Cover the dish tightly before refrigerating. You don’t want the ganache absorbing any fridge smells overnight. Plastic wrap pressed directly onto the surface of the ganache or a tight fitting lid both work.
  • Chill for the full 8 hours. This is the one thing you genuinely cannot rush. The graham cracker transformation happens slowly and it needs the full time. Make this the night before and slice into it the next day.

For the layers

  • 2 boxes instant vanilla pudding mix 4.6 ounces each
  • 3 cups cold milk
  • 8 ounces whipped topping 1 container, thawed
  • 1 box graham crackers 14.4 ounces

For the chocolate ganache

  • 1½ cups semisweet chocolate chips
  • 1 cup heavy cream

Instructions

  • In a large bowl, whisk together the 2 boxes instant vanilla pudding mix and 3 cups cold milk for 2 minutes, until it starts to thicken. Let it sit for 5 minutes to set up.

  • Gently fold the 8 ounces whipped topping into the pudding until smooth and no streaks remain. This is your éclair filling, light and creamy.

  1. Pudding box size: Use the 4.6 ounce boxes, not the smaller 3.4 ounce ones. The larger size gives you the right amount of filling for proper thick layers.

  6. Chill the full 8 hours: This is non negotiable. The graham cracker transformation is slow and needs the full time. Overnight is ideal.
  7. Individual servings: Layer in glasses or mason jars in the same order and chill overnight. They look beautiful and portion themselves.
  8. Whipped topping vs homemade cream: Stick with whipped topping. Homemade whipped cream can weep and separate overnight and affect both the texture and the appearance.
  9. Storage: Up to 4 days covered tightly in the fridge. Gets better on day 2.
  10. Don’t freeze: The filling doesn’t freeze and thaw well. Fridge only.

Frequently Asked Questions

Can I use homemade whipped cream instead of whipped topping?

I’d stick with whipped topping for this recipe. Homemade whipped cream is less stable and can weep and separate overnight in the fridge, which affects both the texture and the appearance of the layers. Whipped topping holds its structure much better for a chilled no bake dessert like this one.

Can I use a different pudding flavor?

Yes. Chocolate pudding gives you a double chocolate version that’s very good. Banana cream pudding with the vanilla filling and chocolate ganache is an excellent combination. Cheesecake flavored pudding is also surprisingly good here. The vanilla is the classic and my personal preference but it’s a flexible recipe.

What if my ganache is lumpy?

The chocolate probably wasn’t melted evenly before stirring. Put the bowl over a pot of barely simmering water and stir gently until smooth. Or microwave in 15 second intervals, stirring between each, until the lumps are gone.

How long does this keep in the fridge?

Up to 4 days covered tightly. The texture actually continues to improve for the first day or two as everything settles further. After day 4 the graham crackers start getting a little too soft and the filling loses some of its structure.

Can I freeze this?

I wouldn’t. The whipped topping and pudding filling don’t freeze and thaw well and you’d end up with a watery separated mess rather than the silky layers you worked for. This is a fridge dessert only.

Can I make individual servings instead of a whole dish?

Yes. Layer in individual glasses or mason jars in the same order, graham crackers, filling, graham crackers, filling, ganache. Chill overnight. They look beautiful and portion themselves which is very convenient.
