Buffalo Chicken Lasagna is about to be your new favorite twist on a classic. Full of hot buffalo wing sauce, tender chicken, and cheese galore, this dish combines 2 drool worthy meals to make the most scintillating and sizzling lasagna you’ve ever tasted.

Now you may be thinking: ‘ Jo, buffalo chicken lasagna? It’s different, it’s wrong!’. Well part of cooking is experimenting, testing out new flavors and totally out there combinations. I for one am glad that this little brain child of a recipe occurred to me the other day, because it’s delicious, and bursting with those buffalo chicken flavors we all know and love.
Packed full of ricotta and blue cheese, buffalo wing sauce, melty gooey cheese, and perfectly al dente lasagna sheets, this dinner will earn you points for both flavor and creativity. My flavor secret weapon here is a little bit of ranch dressing, tossed with some shredded cooked chicken to ensure every bite is moist and packed with rich flavor.
Improving Upon Perfection
Let me just say that if you’re looking for a traditional lasagna recipe, I’ve got some delicious recipes here on the blog. But if you’re looking for a little bit of flare, some adventure, maybe even a little bit of self discovery in terms of what your taste buds crave, then stick around. My buffalo chicken lasagna has it all.
If you’re unfamiliar with buffalo wing sauce it’s just basically a nice red vinegar based hot sauce mixed with some melted butter. I used store bought today, Frank’s brand as it’s my favorite. But if you’d prefer to go homemade or have trouble finding it in your grocery store, I’ll include a section below that details how to make it yourself!
Ingredients In Buffalo Chicken Lasagna

- Chicken – Cooked and shredded up, it’s a perfect way to use up leftover chicken that you get a craving to totally transform!
- Sauce – I used Frank’s Buffalo wing sauce today, it adds the perfect tang and hit of heat to our dish.
- Dressing – We’re using some ranch dressing mixed in with our shredded chicken, just trust me on this one.
- Pasta – We’re using lasagna sheets today, the oven ready kind.
- Cheese – Crumbled blue cheese to really get that buffalo chicken flavor as well as some ricotta cheese, because it is lasagna! We’re also incorporating some mozzarella for that ooey gooey cheese pull.
- Veggies – We’re just using an entire can of diced tomatoes today.
- Egg – To help act as a binder for our cheese mixture.
- Parsley – Fresh and minced up fine to sprinkle liberally over top your lasagna.
- Seasoning – Salt and pepper to taste.
How To Make Buffalo Chicken Lasagna

- Prep the oven: Preheat your oven to 375 F degrees.
- Mix the filling: In a medium size bowl mix together the ricotta cheese, blue cheese, egg, parsley, salt and pepper. Set aside. In another bowl combine the chicken, buffalo wing sauce, ranch dressing and diced tomatoes.
- Assemble the lasagna: Spoon 1/4 of the chicken mixture on the bottom of a 9×13 inch baking dish. Layer 4 lasagna noodles, then another 1/4 of the chicken mixture and 1/3 of the cheese mixture, then sprinkle about 1/3 of the mozzarella cheese. Repeat with noodles, chicken, cheese mixture, mozzarella, noodles, chicken, cheese mixture, and finish with mozzarella. There should be 3 layers of noodles.
- Finish the dish: Cover tightly with aluminum foil and bake in the preheated oven for 30 minutes. Uncover and continue to bake for another 20 minutes or until bubbly and noodles are cooked.

Can I Leave Out Blue Cheese?
No fear! I know there’s many of you out there for whom blue cheese seems just too much, so in that case there are some substitutes we can use. Feta can be crumbled in with ricotta and incorporated into the lasagna. Not feeling the feta? Just sub in more ricotta and mozzarella, I understand we all have our preferences!
How to Make Homemade Buffalo Sauce
You can make your own if you’d like! I Like to use premade as I find it really cuts back on time, but this recipe below is completely delicious if you’d like to go the extra mile.
Ingredients
- 2/3 cup hot sauce – any kind you’d like although I prefer Franks.
- 1/2 cup cold unsalted butter.
- 1/4 teaspoon cayenne
- 1/8 garlic powder
- 1 1/2 tablespoon white vinegar
- 1/4 teaspoon Worcestershire sauce
How to make Buffalo sauce
- In a pot over medium heat combine all your ingredients and bring to a simmer whisking the entire time. Once the sauce begin to bubble remove from heat and allow to cool. It will now be ready to serve!

Storing Leftover Lasagna
Properly cool the lasagna before storing it, so that it will freeze and store evenly. It will stay fresh for 3 – 5 days in an airtight container in the fridge.
Can I Freeze Lasagna?
Frozen lasagna will last for 2 – 3 months if sealed in an airtight container and properly cooled before freezing, just be sure to allow to thaw fully in the fridge before re heating.

I use 15 oz ricotta. And I put two teaspoons of garlic powder a tablespoon of paprika and a teaspoon of black pepper in the chicken mixture along with about a quarter cup of oil
I doubled the amount of ricotta bc we like our cheese! I used chicken from entire rotisserie chicken. The men in the house loved it!
When you say blue cheese, do you mean dressing or blue cheese crumbles? Could I use more ranch dressing in place of the blue cheese?

Yes, we’re talking about the crumbled blue cheese. The mix of cheeses used in the recipe helps the sauce get gooey and hold together all the delicious flavors and ingredients, while if you would add too much dressing it might get too watery, so we’re trying to avoid that.

My husband and I typically don’t like blue cheese. Is this something that you can taste strongly?
It’s completely optional! Blue cheese pairs beautifully with buffalo sauce, but if you don’t like the taste, of course you can leave it out.

We love this! Boyfriend is gluten free and the no boil GF noodles work great. He is not a fan of blue cheese so I use feta. I also dice up some celery to sprinkle on top for some fresh crunch. Why not have celery with your wings! Thanks for this get recipe!!!

Wowza! I only had 2 bites of this and I’m already posting a review (no joke). This is soooooo good! I’m not a fan of blue cheese so I just substituted more ricotta. When I read 3/4 cup of hot sauce I wondered if it would be too spicy but it is perfect. I used rotisserie chicken so it couldn’t be any easier! Winner winner buffalo chicken lasagna dinner!
