Slow Cooker Chicken Fajitas Recipe
I always look forward to fajita night! I just love perfectly seasoned and cooked juicy meat with lots of bell peppers and onions folded into a warm tortilla! It’s one of my favorite meals and I make my Steak Fajitas and Shrimp Fajitas all the time! So it’s not like making chicken fajitas is really a stretch for me.
However, this easy slow cooker chicken fajitas recipe is a tad special! You’ve probably already figured out that this recipe uses a crockpot as the cooking method, which I might add works like a wonder to create the most tender juicy chicken with no mess. And like with all slow cooker recipes it’s so darn simple in that all you have to do is put a list of ingredients into a crockpot, turn it on to cook, and your meal is ready in just a few hours.
This recipe is seriously my new favorite way to make chicken fajitas. It’s versatile and a complete meal on its own making it a fantastic weeknight dinner option. Yet, if I’m in a cooking mood I’ll add a side of beans and Mexican Rice for a full-out Tex-Mex feast!

Ingredients You’ll Need
- Bell Peppers – I always use a colorful mix of red, green, and yellow bell peppers.
- Onion – You need a brown or white onion.
- Chicken – Boneless skinless chicken breasts are what I use, but you could also use boneless skinless chicken thighs if you prefer.
- Fajita Seasoning – You can either use store-bought or make your own homemade fajita seasoning.
- Can Diced Tomatoes – Add both flavor and moisture to the chicken.
- Can Green Chilies – Used for a bit of mild spice.
- Lime Juice – Blends perfectly with all the other seasonings to add yet another layer of flavor and also helps to tenderize the chicken as it slowly cooks.
How To Make Slow Cooker Chicken Fajitas
This one pot meal literally cooks itself! That’s the best part about using a crockpot. All you have to do is put the ingredients in, turn it on to cook, and walk away.
Place The Ingredients In The Crockpot
To begin, put half of the bell peppers and onions into the crockpot. Then place the chicken breasts on top and sprinkle with 1 tablespoon of the fajita seasoning. Next, pour the diced tomatoes and green chiles on top of the chicken along with the remaining bell peppers and onions followed by the rest of the fajita seasoning and lime juice. And that’s it! Your prep is complete.
Cook The Chicken Fajitas
Now, put the lid on the slow cooker and cook the chicken fajitas on HIGH for 3 to 4 hours or on LOW for 6 to 8 hours. Whether you cook the fajitas on HIGH or on LOW will depend on how long you plan to be away from your crockpot.
Once the chicken is cooked, remove it from the slow cooker. Now you can either cut it into strips/slices or shred it using two forks. Then put the chicken back into the crockpot and toss it together with all the other ingredients so that it’s coated in all the yummy flavors. You can also taste for seasoning and adjust with salt and pepper if needed.
Assemble The Chicken Fajitas
Finally, it’s time for the fun delicious part! To make the fajitas, you will warm a few tortillas, then fill them with some slow cooker chicken fajitas mixture. Next top with creamy sour cream, cheese, salsa or Cheesy Guacamole.
Can I Use Frozen Chicken In The Crockpot?
It’s typically not recommended that you use frozen chicken in the slow cooker because there is a risk of bacteria starting to form before the chicken reaches a safe temperature. So if your chicken breasts are frozen it’s not a problem, but it’s best to thaw them out in the fridge the night before or in the microwave.
Can I Use Chicken Thighs Instead?
Yes! Just use 6 boneless skinless chicken thighs in place of the breasts and follow the instructions exactly the same.
Expert Tips
- Fresh lime is a must. For the best results use fresh lime juice. It not only adds better flavor but also helps to make the chicken more tender.Â
- Keep the chicken warm. Some slow cookers have timers which is a wonderful thing! But for food safety make sure your chicken doesn’t cool off and stay in the crockpot at room temperature for too long once it’s cooked.
- Make it spicy. You can easily make spicy slow cooker chicken fajitas if you like by adding a sliced jalapeno in with the bell peppers and onions.Â
Leftovers
These crockpot chicken fajitas will keep in the fridge for about 4 days or in the freezer for up to 3 months when stored in an airtight container. To reheat, just put in the microwave for a few minutes or in a pan on medium heat. However, if frozen, it’s best to let the fajitas thaw out in the fridge overnight prior to reheating.

Slow Cooker Chicken Fajitas
Ingredients
- 1 medium red bell pepper sliced
- 1 medium green bell pepper sliced
- 1 medium yellow bell pepper sliced
- 1 large onion sliced
- 3 large chicken breasts boneless and skinless
- 2 tablespoons fajita seasoning
- 10 ounce diced tomatoes 1 small can
- 4 ounce green chiles 1 small can
- 1 lime juiced
- 8 tortillas for serving
Instructions
- Add half the bell peppers, onion to your slow cooker. Place the chicken breasts on top. Season with 1 tablespoon of the fajita seasoning.
- Next layer with diced tomatoes, green chiles and remaining bell peppers and onion. Season with remaining fajita seasoning and juice from the lime.
- Cover the slow cooker and cook on HIGH for 3 to 4 hours or LOW for 6 to 8 hours.
- Remove the chicken from the slow cooker and cut into strips or shred with a couple forks. Return the sliced chicken to the slow cooker and toss with the other ingredients.
- Assemble fajitas on tortillas with your favorite toppings like sour cream, guacamole, or cheese.
