Taco night usually means the same ground beef and the same seasoning packet. Not tonight. Think smoky chipotle chicken, charred peppers and onions, and bubbly melted cheese, all roasted on 1 pan and piled into warm tortillas. Then comes a creamy chipotle sauce poured over everything, and Sheet Pan Chipotle Chicken Tacos become the taco night you’ll want on repeat. Smoky, saucy, a little spicy, and only 1 pan to wash.

Easy Sheet Pan Chicken Tacos
I wrote a whole cookbook about getting dinner done in one pot, so I have strong feelings about extra dishes. These tacos pass the test.
The chicken marinates in chipotle peppers, lime, and a smoky spice mix. Then it roasts right next to the peppers and onions on a single sheet pan. A little cheese and a quick blast under the broiler at the end gives you those charred, crispy edges everyone fights over.
While it all roasts, you whisk together the sauce. That’s it. That’s the whole job.
Chipotle Peppers in Adobo: The Secret to These Tacos
Chipotle peppers are smoked, dried jalapeños. They come canned in adobo, a thick, tangy red sauce. You’ll find the little cans in the Mexican food aisle.
A dry spice rub gives you flavor on the outside of the chicken. Chipotles in adobo get you deep, smoky, real chile flavor all the way through. That’s the big difference between these and plain old seasoned chicken.
We use them twice: minced into the marinade with a spoonful of the sauce, and whisked into the creamy chipotle sauce. The smoked paprika in the seasoning adds even more smokiness.

How to Get Charred Edges on Sheet Pan Chicken
- Give everything room. Spread the chicken and vegetables out in a single layer. When food is piled up, it steams in its own juices and turns pale and soft. With space around it, it roasts and browns.
- Use a hot oven. 425°F (220°C) is hot enough to cook the chicken strips through and soften the peppers in under 20 minutes.
- Finish under the broiler. Cheese on top, then 2 to 3 minutes under the broiler. That’s where the melty cheese and the blackened little edges on the peppers come from. Don’t walk away. Broilers go from golden to burnt in about 30 seconds.
Ingredients for Sheet Pan Chipotle Chicken Tacos

- Chipotle seasoning (garlic powder, onion powder, smoked paprika, cumin, coriander, salt, and black pepper): A quick homemade spice mix. About ⅔ goes on the chicken and the rest on the vegetables. Smoked paprika is the one not to skip, since that’s where the smoky flavor comes from. No coriander? Leave it out.
- Boneless skinless chicken breasts (1½ pounds, cut into strips): Cut the strips about the same size so they cook evenly. Boneless skinless thighs work too. Just cook them to 175°F (79°C) so they’re tender.
- Olive oil (2 tablespoons, plus a drizzle for the vegetables): It helps the seasoning stick and everything brown. Avocado or vegetable oil works too.
- Chipotle peppers in adobo (3 peppers, minced, plus 1 tablespoon adobo sauce): Smoked, dried jalapeños canned in a tangy red sauce. You’ll find them in the Mexican food aisle. 2 go in the marinade and 1 goes in the sauce. Freeze any leftovers for next time.
- Bell peppers, red onion, and jalapeño (2 cups mixed peppers, 1 red onion, and 1 optional jalapeño, all sliced): Red, yellow, and orange peppers are the sweetest. A yellow or white onion is fine. Scrape the seeds out of the jalapeño for less heat, or skip it.
- Mexican cheese blend (1 cup, shredded): Melted over everything under the broiler. Monterey Jack, cheddar, or pepper jack all work.
- Mayonnaise, sour cream, and buttermilk (½ cup mayonnaise, ⅓ cup sour cream, and ⅓ cup buttermilk): The creamy base of the chipotle sauce. Use store bought mayo or my homemade mayonnaise. Greek yogurt can stand in for the sour cream. No buttermilk? Stir 1 teaspoon lime juice into ⅓ cup milk and let it sit for 5 minutes.
- Lime and cilantro (3 tablespoons lime juice, 2 tablespoons chopped cilantro, and lime wedges): Lime juice goes in both the marinade and the sauce, and fresh tastes brighter than bottled. Cilantro and lime wedges go on top. Not a cilantro fan? Use sliced green onions.
- Corn or flour tortillas (8, warmed): Corn tastes more like a taco truck, and flour is softer and easier to fold. Warm them either way so they don’t crack.
How to Make Sheet Pan Chipotle Chicken Tacos

Mix the chipotle seasoning: Stir the garlic powder, onion powder, smoked paprika, cumin, coriander, salt, and pepper together in a small bowl. It’ll look like a little pile of rusty red dust. Set aside about ⅓ of it for the vegetables.

Marinate the chicken: Toss the chicken strips in a big bowl with the olive oil, minced chipotles, adobo sauce, lime juice, and the bigger share of the seasoning. Use your hands or tongs and make sure every strip is coated. It’ll be thick, red, and a little messy. That’s what you want. Let it sit for at least 30 minutes.
Heat the oven: When you’re ready to cook, preheat your oven to 425°F (220°C). Line a large rimmed baking sheet with foil. Future you will be so happy at cleanup time.

Season the vegetables: Toss the bell peppers, red onion, and jalapeño with the rest of the seasoning and a drizzle of olive oil. Spread them out on one side of the pan. Lay the chicken strips on the other side. Keep everything in a single layer, with a little space between pieces. It might look crowded at first, but just spread it out as best you can.

Roast: Roast for 18 to 20 minutes. The chicken is done when it’s cooked through and white in the middle with no pink. The peppers will be soft and starting to brown at the edges.

Make the creamy chipotle sauce: While everything roasts, whisk the mayonnaise, sour cream, buttermilk, lime juice, garlic powder, and minced chipotle together until smooth. It’ll be a pretty pale orange. Pop it in the fridge until you’re ready to eat.

Add cheese and broil: Scatter the cheese over the chicken and vegetables. Switch your oven to broil and slide the pan back in for 2 to 3 minutes. Stay right there and watch. You’re waiting for the cheese to bubble and the edges of the chicken and peppers to char. Some dark spots are a good thing.
Build your tacos: Pile the chicken and peppers into warm tortillas. Drizzle on lots of chipotle sauce. Finish with cilantro and a squeeze of lime. No, you can’t have too much sauce. I checked.
How Spicy Are Chipotle Chicken Tacos?
They have a nice, smoky kick, but they won’t blow your head off. The cool, creamy sauce softens the heat too.
- For milder tacos, use 1 chipotle pepper in the marinade instead of 2, and skip the jalapeño.
- For spicier tacos, keep the jalapeño seeds in, or add another spoonful of adobo sauce to the marinade.

Taco Toppings
The tacos are complete as they are, but it’s taco night, so go ahead:
- Sliced avocado or guacamole
- Crumbled cotija or queso fresco
- Shredded lettuce or cabbage for crunch
- Pickled red onions
- Your favorite hot sauce
How to Store Leftovers
Store the chicken and vegetables in an airtight container in the fridge for up to 3 days. Keep the sauce in its own container, also for up to 3 days.
Reheat the chicken and peppers in a skillet over medium heat or in the microwave until hot. Then build fresh tacos. Assembled tacos get soggy, so I’d only build what you’re going to eat.

- 1 tablespoon garlic powder
- 2 teaspoons onion powder
- 2 teaspoons smoked paprika
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon salt
- 1 teaspoon black pepper
For the chicken and vegetables
- 1½ pounds boneless skinless chicken breasts cut into strips
- 2 tablespoons olive oil
- 2 chipotle peppers in adobo minced, plus 1 tablespoon adobo sauce
- 2 tablespoons lime juice
- 2 cups mixed bell peppers sliced
- 1 red onion sliced
- 1 jalapeño sliced, optional
- 1 cup Mexican cheese blend shredded
For the creamy chipotle sauce
- ½ cup mayonnaise
- ⅓ cup sour cream
- ⅓ cup buttermilk
- 1 tablespoon lime juice
- ½ teaspoon garlic powder
- 1 chipotle pepper in adobo minced
For serving
- 8 corn or flour tortillas warmed
- 2 tablespoons fresh cilantro chopped
- Lime wedges
Instructions
- Make the chipotle seasoning first. In a small bowl, stir together the 1 tablespoon garlic powder, 2 teaspoons onion powder, 2 teaspoons smoked paprika, 1 teaspoon cumin, 1 teaspoon coriander, 1 teaspoon salt, and 1 teaspoon black pepper.

- In a large bowl, toss the 1½ pounds chicken strips with the 2 tablespoons olive oil, the 2 minced chipotle peppers and 1 tablespoon adobo sauce, 2 tablespoons lime juice, and about two thirds of the chipotle seasoning. Let it marinate for at least 30 minutes. The chipotles in adobo are the upgrade here, that smoky, deep, real chile flavor is what sets this apart from a dry seasoning alone.

- When ready to cook, preheat your oven to 425°F (220°C) and line a large rimmed baking sheet with foil.
- Toss the sliced bell peppers, red onion, and jalapeño with the remaining chipotle seasoning and a drizzle of oil. Spread them on one side of the sheet pan and arrange the marinated chicken on the other side, both in a single layer so everything roasts instead of steams.

- Roast for 18 to 20 minutes, until the chicken is cooked through and the vegetables are tender.

- While it roasts, make the sauce. Whisk together the ½ cup mayonnaise, ⅓ cup sour cream, ⅓ cup buttermilk, 1 tablespoon lime juice, ½ teaspoon garlic powder, and 1 minced chipotle pepper until smooth. Refrigerate until serving.

- Scatter the 1 cup shredded cheese over the chicken and vegetables, then switch the oven to broil for 2 to 3 minutes, until the cheese is melted and the edges of the chicken and peppers char. Watch it closely, since the broiler works fast.

- Pile the chipotle chicken and peppers into warm tortillas, drizzle generously with the creamy chipotle sauce, and finish with the 2 tablespoons cilantro and a squeeze of lime.
Tips & Notes:
- Chipotles in adobo: Find them canned in the Mexican food aisle. Freeze any leftovers in a small container for next time.
- Heat level: For milder tacos, use 1 chipotle in the marinade and skip the jalapeño.
- Single layer: Spread the chicken and vegetables out with space between pieces so they roast and brown instead of steaming.
- Broil carefully: Stay by the oven. The cheese and edges can go from charred to burnt quickly.
- Chicken thighs: Boneless skinless thighs work too. Cook them to 175°F (79°C) so they’re tender.
- No buttermilk: Stir 1 teaspoon lime juice into ⅓ cup milk and let it sit for 5 minutes.
- Storage: Keep the chicken and vegetables and the sauce in separate airtight containers in the fridge for up to 3 days.
nutrition facts
Can I marinate the chicken overnight?
I wouldn’t. The lime juice can start to turn the outside of the chicken soft and mushy if it sits too long. A few hours in the fridge is plenty.
Can I make the chipotle sauce ahead?
Yes. Make it up to 3 days ahead and keep it covered in the fridge. Give it a quick stir before serving.
Can I make these on the grill instead?
I’ve only tested them in the oven, so I can’t promise the timing. If you try it, use a grill basket so the peppers and strips don’t fall through.
