If you’re a veggie lover like myself, you won’t want to miss out on this incredibly quick, and I mean quick, way to cook all those healthy vegetables. With very little effort, these amazing Air Fryer Vegetables will pair well with any protein, or are perfect for eating by themselves, they are that good.

You can cook just about anything in an air fryer, and although I also love steamed vegetables, there’s nothing like fried veggies. That’s the beauty of this method of cooking, it’s healthy and you get all the flavor of fried veggies. For something different, try my Air Fryer Hasselback Potatoes.

Ingredient Notes

  • Peppers – Use any color pepper.
  • Mushrooms – I use white or cremini, halved.
  • Cauliflower – Cut into florets.
  • Zucchini – Cut into 1/2″ moons.
  • Garlic – Always a great flavoring agent.
  • Oil – I use Olive oil but vegetable or peanut oil works as well.
  • Seasoning – Salt and pepper to your taste.

How To Cook Vegetables In The Air Fryer

  1. Prepare the Vegetables: Chop vegetables, and in a large bowl, toss all the ingredients together.
  2. Preheat Oven: Preheat the air fryer to 380°F.
  3. Cook: Place the veggies in the air fryer, spread out. Cook for 10-12 minutes, tossing them half way through.

Does air frying vegetables remove nutrients?

All vegetables lose some nutrients when cooked, but when compared with other methods of cooking, air fried vegetables loses less nutrients.

Are air fried vegetables healthy?

Air frying is healthier than frying in oil. It cuts calories by 70% to 80% and has a lot less fat. This cooking method might also cut down on some of the other harmful effects of oil frying.

How to serve air fried vegetables?

Vegetables in the air fryer are great served by themselves, especially as an appetizer for a get together or party. For dinner, pairing them with any protein such as chicken, pork or beef also adds tons of healthily goodness.

Can I air fry frozen vegetables?

Yes, you can air fry frozen vegetables. I recommend that you add seasonings after the vegetables have cooked for a few minutes in the air fryer and have thawed.

Tips

  1. If using frozen veggies, you’ll have to add a few minutes to the cooking time to account for the time required to thaw out the veggies during the cooking process. Also make sure to give frozen vegetables more room between them to allow the water to evaporate so they can become perfectly crispy.
  2. Food will cook best in an air fryer if you don’t overcrowd the basket.
  3. Flipping the food halfway through, is important for even cooking.

Leftovers

Store cooked vegetables in the fridge for up to 2-3 days. Freezing cooked vegetables are typically not recommended.

Ingredients

  • 1 bell pepper any color
  • 1 cup mushrooms white or cremini, halved
  • 1 cup cauliflower cut into florets
  • 1 medium zucchini cut into ½ inch moons
  • 3 cloves garlic
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
