These Crispy Parmesan Potatoes have a crispy skin, tender, fluffy inside, and a scrumptious crunchy parmesan cheese crust! Paired with a homemade chipotle mayo dip, these potatoes will become a new favorite.

These Crispy Parmesan Potatoes are what dreams are made of! When the baby potatoes are roasted, the skin gets crispy and the insides become creamy and fluffy – what a combination! These potatoes are made with a short list of simple ingredients, but pack a huge punch when it comes to flavor and texture!
My favourite part, the Parmesan cheese! The parmesan layer is thick, crunchy, and golden-brown with a pleasing cheesy, savory flavor that goes hand in hand with those earthy baby potatoes. Paired with a homemade chipotle mayo dip, the flavor combination of these babies will knock your socks off.
The best potatoes
This is such a great way to make potatoes! They are cheesy, savory, wonderfully crispy on the outside and fluffy and soft in the inside. Not to mention, they’re also pretty quick and easy to make, with few dishes to clean! These potatoes are so good, they might be my new favorite. Step aside French fries, there a new king of potatoes in town!
Ingredients

- Cheese – We need Parmesan cheese for this one, of course! Grated!
- Breadcrumbs – I used panko breadcrumbs but regular breadcrumbs work as well.
- Seasoning – I used a mix of garlic powder, poultry seasoning and smoked paprika.
- Salt & Pepper – To taste.
- Olive Oil – Substitute vegetable, canola, sunflower, safflower or avocado oil.
- Potatoes – I used red baby potatoes, halved.
Dipping sauce
- Mayonnaise – You can use store bought or make your own using my homemade mayo recipe!
- Garlic – Fresh is best! Minced.
- Chipotle Chili Powder
- Lemon Juice – I used freshly squeezed!
How to make crispy parmesan potatoes

- Preheat Oven: Preheat the oven to 400F.
- Mix Seasoning: Mix the parmesan, breadcrumbs, garlic powder, poultry seasoning, salt, and pepper in a bowl.
- Coat Potatoes: Spread the oil evenly over the bottom of a 9×13″ pan. Sprinkle the parmesan mixture over the oil. Arrange the potatoes, cut side down, over the parmesan mixture in an even layer.
- Bake & Make Dip: Bake for 30-40 minutes or until the potatoes are fork tender and the cheese is bubbly and browned. In the meantime, mix the dip ingredients together and let it sit in the fridge.
- Cool & Serve: Let the pan cool for 5-10 minutes before using a spatula to flip and remove the potatoes. Serve with dip!

Some tips
- LET THEM COOL!! It is extremely important to let your potatoes cool down for a few minutes after removing them from the oven. This will allow the cheese to harden before removing the potatoes from the pan so none of it will get stuck to the bottom!
- Bake the potatoes with the skin on: The thin skin will get nice and crispy when baked, giving you the perfect texture.
- Shred your Parmesan cheese super fine: Pre-shredded or grated store-bought cheese works really well in this recipe!! This will allow the cheese to become crispier and cover more of the potato. This way the cheese won’t ‘melt’, but rather form a crispy, cheesy crust on the flat side of the potato.
- Use a glass casserole dish or a large non-stick ceramic container: Pyrex is a great option!! This will help prevent the cheese from burning and sticking to the bottom of the pan, which is more likely to happen if you use an aluminum baking pan or sheet for these potatoes!
- Try to fit as many halved potatoes in the dish as possible: Create a full, single layer (potatoes can be touching) to make them extra crispy and delicious.

Crispy parmesan potatoes pair well with ANYTHING! These potatoes could even be served as a tasty appetizer, finger food, or snack. I mean, potatoes are already a classic side dish, add a little cheese, crisp them up and BOOM – a perfect side dish for any meal. Try pairing them with these mains:

Leftovers
Store leftover parmesan potatoes in an airtight container in the fridge for 3-4 days.
Keep ’em crispy!
It’s a challenge sometimes to reheat ‘crispy’ foods, but try this!
Place in a baking pan cheese side UP and bake at 400F/200C for 5 minutes or until just heated through and cheese is crispy again. It’s not quite the same as freshly made, but it’s still darn good!
