Heat The Oil
With the batter made, now heat the oil to 375°F (190°C). You can use a deep fryer, heavy bottomed pan, or large Dutch oven to fry the fritters. If using a pan or Dutch oven you need to fill it with about 2 inches of oil. Also, for safety reasons, it is crucial that you keep an eye on the temperature, which you can do using a digital cooking thermometer. If the oil gets too hot you need to turn the heat down or off.
