There’s nothing I love more than an easy recipe. Roasted vegetables are always on my dinner table at home, there are so many variations and possibilities! One of my favorites has to be asparagus, there’s something about the long stems that make dinner seem so much more elegant, even if you’re using the utmost of simple ingredients like fresh lemon, olive oil, and salt and pepper.

Roasting is so easy and it brings out the distinctive complexity that each veggie possesses. Whether it’s carrots, broccoli, brussels sprouts, green beans – you name it, I’ll roast it and serve it as a side!
Ingredient Notes

- Asparagus – Make sure to trim the ends!
- Olive Oil – Substitute vegetable, sunflower, safflower or avocado oil
- Garlic Powder – This gives a nice garlicky flavor to the asparagus without overpowering the dish!
- Lemon Juice – I always prefer freshly squeezed, but store bought works as well!

- Preheat Oven: Preheat the oven to 400°F. Line a baking sheet with parchment paper.
- Prep Asparagus: Add the asparagus to the baking sheet. Drizzle the olive oil, then sprinkle the garlic powder, salt, and pepper, over the asparagus. Use your hands to toss the asparagus to disperse everything evenly. Spread the asparagus out in an even layer.
- Roast: Transfer the baking sheet to the oven and roast for 15-20 minutes, or until the asparagus is tender and crisped to your preference.
- Finish & Serve: Drizzle the lemon juice over the asparagus and serve.
