This simple recipe for Roasted Asparagus comes together in under 30 minutes! With minimal prep work and a handful of fresh ingredients, this is bound to become one of your new go-to side dishes!

There’s nothing I love more than an easy recipe. Roasted vegetables are always on my dinner table at home, there are so many variations and possibilities! One of my favorites has to be asparagus, there’s something about the long stems that make dinner seem so much more elegant, even if you’re using the utmost of simple ingredients like fresh lemon, olive oil, and salt and pepper.

This recipe requires only 4 ingredients, plus roasting enhances the natural sweetness and flavor of the asparagus and it’s my favorite way to serve vegetables for dinner! Roasting is so easy and it brings out the distinctive complexity that each veggie possesses. Whether it’s carrots, broccoli, brussels sprouts, green beans – you name it, I’ll roast it and serve it as a side!

Ingredient Notes

  • Asparagus – Make sure to trim the ends!
  • Olive Oil – Substitute vegetable, sunflower, safflower or avocado oil
  • Garlic Powder – This gives a nice garlicky flavor to the asparagus without overpowering the dish!
  • Lemon Juice – I always prefer freshly squeezed, but store bought works as well!

How To Make Roasted Asparagus

  1. Preheat Oven: Preheat the oven to 400°F. Line a baking sheet with parchment paper.
  2. Prep Asparagus: Add the asparagus to the baking sheet. Drizzle the olive oil, then sprinkle the garlic powder, salt, and pepper, over the asparagus. Use your hands to toss the asparagus to disperse everything evenly. Spread the asparagus out in an even layer.
  3. Roast: Transfer the baking sheet to the oven and roast for 15-20 minutes, or until the asparagus is tender and crisped to your preference.
  4. Finish & Serve: Drizzle the lemon juice over the asparagus and serve.

What Can I Add To This Dish?

If you want to add a few more extra goodies to your asparagus, feel free! Some great options:
– Bacon makes everything better!
– Parmesan Cheese is one of my favorites.
– Add your favorite Seasonings/Spices!
– Butter for decadence.
– Mix in some tomatoes for added sweetness.
– Balsamic Glaze for full flavor.

How To Serve

This side dish is perfect alongside many savory mains! Serve with your favorite protein, such as chicken, steak, pot roast or fish, add some mashed potatoes and a salad on the side and you’ve got the perfect dinner.

Tips

  1. As vegetables cook, they tend to release moisture, therefore when placed too close together, they can become soggy! To keep your roasted asparagus brown and crisp, they need some space to breathe!
  2.  Arrange them in a single layer and don’t overcrowd the baking sheet. This applies to all vegetables when you’re roasting them! By following this tip, you’ll get perfectly roasted veggies every time.

Leftovers

Refrigerate leftover roasted asparagus in a shallow, airtight container or resealable plastic bags. Properly stored, your roasted asparagus will last for 3-5 days in the fridge!

Reheating

You can reheat leftovers in the microwave or you can preheat your oven to 400°F and spread the asparagus out on a baking sheet. Toss them with 1 tablespoon of olive oil and bake until heated through.

  • 1 pound asparagus 1 bunch, with the ends trimmed
  • 2 tablespoon olive oil
  • ½ teaspoon garlic powder
  • ½ teaspoon salt or to taste
  • ¼ teaspoon pepper or to taste
  • 1 tablespoon lemon juice
