If you’re having a quick BBQ or a fancy family gathering, this salad is perfect for any occasion. It takes only minutes to put together and the delicious taste goes so well with any grilled meat you have sizzling on your grill. Keep it simple as the recipe indicates or add some extra flavors to hype it up, whatever you choose, this Watermelon Feta Salad will fit right in.
Ingredient Notes
- Watermelon – Cubed seedless watermelon will do great.
- Cucumber – I used seeded English cucumber cut into cubes.
- Mint – Fresh mint leaves will help give your salad a refreshing taste.
- Feta cheese – Crumbled feta cheese will work well for this recipe, but you can switch it up with any goat cheese, ricotta or queso fresco.
- Onion – Some sliced red onion to add more flavor to your salad. You can substitute it with sliced shallots if preferred.
- Salt – To taste.
- Vinegar – Red wine vinegar is what I used here, but some other substitutes are apple cider vinegar or white wine vinegar. If you want to keep vinegar completely out, you can sub this with lemon or lime juice.
- Olive oil – You can substitute it with either sunflower or safflower oil if you want less of a bold flavor.
How To Make Watermelon Feta Salad
- Prep dressing: In a small bowl whisk together the olive oil, red wine vinegar and salt.
- Mix and serve: In a large serving bowl combine the rest of the ingredients together and pour the dressing over. Toss well until combined.
Frequently Asked Questions
What else can I add?
This watermelon salad is tasty on its own just as described, but there are some other ingredients that will go well with it. You can incorporate some olives, spinach, arugula, sliced strawberries, cubed kiwi or even chopped basil.
How to serve?
You can enjoy this salad as is, in a bowl loaded with fresh mint and dressing at any BBQ party, gathering or just a casual evening in. Or you can have it as a side for any of these tasty recipes:
Salmon en Papillote
Garlic Butter Shrimp
Garlic Soy Chicken
Tips
- While olive oil goes amazing in salads, there may be a few of you who might not like the bolder flavor of this oil so you can substitute it with either sunflower or safflower oil.
- Crumbled feta cheese is amazing, but if you wish to substitute it with something else aim for a salty yet soft cheese such as ricotta, goat cheese or queso fresco. These types will blend very well with the rest of your ingredients.
- If you can’t find any red wine vinegar, you can easily substitute it with white wine vinegar, apple cider vinegar or even champagne vinegar. While balsamic vinegar is usually good for salads, it would be a bit too bold for this type of salad. Another great substitute if you wish to keep the vinegar out completely is squeezed lemon or lime juice.
Leftovers
I personally recommend you make it to serve immediately so the watermelon and cucumber don’t dry out. But sometimes we make more than we can finish. If you do end up with any leftovers, make sure you store them in an airtight container and place them in the fridge. The salad will last for up to 1-2 days.
