- Pork – You’ll need ground pork, you can use lean or some with a bit fat to it. The fattier it is, the juicier the sausages are. You can also mix in other ground meats like lean beef, chicken, or turkey.
- Savory spices – Dried thyme, rosemary and sage, combined with ground nutmeg, salt and pepper are the ultimate spices that will make your breakfast sausage taste amazing.
- Sweet ingredients – Brown sugar and maple syrup to bring some extra flavor to the recipe.
- Oil – To cook the sausages. Canola, sunflower, safflower, or avocado oils will work too.

- Mix all ingredients. In a large bowl, combine the ground pork with the thyme, rosemary, sage, brown sugar, salt, pepper, nutmeg and maple syrup. Mix well.
- Shape your patties. Shape into 16 equal size patties, about ¼ cup per patty, and flatten so that each patty is about 2½ to 3 inch in diameter.
- Cook the patties. Heat the vegetable oil in a skillet over medium heat. Add sausage patties and cook for 2 to 3 minutes per side or until browned.
