Scramble The Eggs

The first step is to cook the eggs! First, whisk your eggs in a bowl and then scramble them in a large skillet over medium heat. Then remove them from the heat and set them aside for now.

Next, lay out all your egg roll wrappers on a clean, flat surface. Then divide the scrambled eggs, shredded cheddar, crumbled breakfast sausage, and diced bell peppers evenly among the wrappers. You want to arrange the filling in the center of the wrapper.

Fold The Egg Rolls

Once you’ve divided the filling, start folding up the egg rolls. First, fold the bottom corner of the wrapper over the filling. Then fold in the two side corners, like you’re making an envelope. Now, brush a little bit of water on the final corner and then roll the egg roll toward that corner to create a neatly wrapped bundle. Then repeat this process with the remaining wrappers.

Fry The Egg Rolls

Let’s start getting ready to fry! Heat about 2 inches of vegetable oil to 350°F (175°C) in a large skillet or deep fryer. It’s important to do this step in batches so you don’t crowd the pan. Very carefully place the egg rolls into the hot oil and fry them for about 2 to 3 minutes on each side, or until they are golden brown and crispy. Then use a slotted spoon to remove them and place them on a plate lined with paper towels to drain.

Serve And Enjoy

  • 10 egg roll wrappers
  • 6 large eggs
  • 1 cup cheddar cheese shredded
