Strawberry Cream Cheese French Toast Roll Ups

I have for you one of my favorite new brunch recipes! I’ve seen these French toast roll ups all over the place and just had to try them out myself. I really couldn’t believe how easy this recipe turned out to be! This beautiful and perfectly dippable version of French toast requires minimal effort.

What Is French Toast?

Also known as “eggy bread“, this is a tried and true recipe that many of us grew up on. French toast is made from bread soaked in an egg and milk mixture, often spiced with cinnamon, then pan fried and served with sweet toppings.

What do they call French toast in France, do you ask? It is actually called “pain perdu” which means “lost bread”. This comes from the original purpose of the recipe which was to make use of stale bread.

Ingredients in Strawberry French Toast Roll Ups

This is exactly what you might think! We have basic French toast ingredients with a little twist. So simple yet so genius. Keep scrolling for the full recipe and ingredient amounts.

  • White bread – I used white bread because it’s soft, pliable, and easy to roll. You can use any type of bread that you like, but keep in mind that it needs to roll without cracking.
  • Cream cheese – Letting your cream cheese come to room temperature will make it a lot easier to work with.
  • Berries – Make sure to dice them nice and small to make these not only easier to roll but easier to eat.
  • Butter – I always use unsalted butter.
  • Eggs – Use large eggs for this recipe.
  • Milk – This helps thin out the egg mixture so it spreads easier over the rolls. You can use non-dairy alternatives as well.
  • Cinnamon – This is the flavor that really makes French toast! If you don’t like cinnamon, you can leave it out.
  • Vanilla – I love to have a little pop of warmth!

How to make Strawberry French Toast Roll Ups Recipe

I know these look impressive but, trust me, they are so easy to make!

  1. Make the egg mixture: In a shallow bowl whisk the eggs, milk, cinnamon and vanilla extract until well combined. Set aside.
  2. Roll the bread: Using a rolling pin, roll the bread until it’s flat. Slice the crusts off with a sharp knife. Spread with cream cheese on each slice of bread then top with a few pieces of strawberries, then roll them tight. Dip the roll up in the egg mixture and make sure all the bread has been coated. Repeat with remaining ingredients.
  3. Finish the strawberry rolls: Melt the butter over a medium-high skillet. Sear the rollups starting with the seam side down until they’re browned on all sides. Drizzle with maple syrup and serve.

Get creative with your fillings; this recipe is so versatile. You can load these roll ups with anything that comes to mind!

  • Blueberries, blackberries, raspberries
  • Cherries
  • Bananas
  • Apple and caramel
  • Jam
  • Nutella
  • Custard

Keep your sides light for this recipe. The roll ups are surprisingly filling! Try some of these on the side:

Storing Leftover Strawberry French Toast Roll Ups

These are best eaten fresh, but you can store your roll ups in an airtight container or large zip bag in the fridge. They will last 3-4 days.

You can also store them in the freezer for 2-3 months. Freeze them on a cookie sheet lined with parchment paper then covered with plastic first for 1 hour, then transfer them to a freezer bag or airtight container so they don’t all freeze in one block.

You can reheat them either in the microwave at 30 second intervals until they’re at your desired temperature or you can bake them at 325F for 10-15 minutes if thawed or 20-30 minutes if frozen.

Ingredients

  • 8 slices white bread fresh sandwich bread
  • 2 ounce cream cheese at room temperature
  • 4 large strawberries diced small
  • 2 tablespoon butter unsalted, for frying

Egg Mixture

  • 2 large eggs
  • 1 tablespoon milk
  • ½ teaspoon cinnamon ground
  • 1 teaspoon vanilla extract
