- Lime juice – Fresh lime juice really makes all the difference here.
- Cilantro – Make sure you also get fresh cilantro. It’s the star of the show!
- Red pepper flakes – You can add as much, as little, or none at all if you prefer.
- Seasoning – Salt, pepper, cumin and garlic. Season with salt and pepper to taste.
- Chicken – I used boneless skinless breast for this recipe, but you can use this for any cut of chicken you prefer. Even a full chicken will work. Please keep in mind that cooking times will vary if you use different cuts.
- Olive oil – You can also use avocado, peanut, safflower, or sunflower oils.

- Marinate your chicken: Combine the olive oil, lime juice, cilantro, minced garlic, cumin, chili flakes, salt and pepper in a large bowl. Add the chicken and toss so that each piece is coated. Let the chicken marinate fo 30 minutes – 2 hours.
- Cook the chicken: Heat a skillet over medium-high heat with the olive oil. Cook the chicken until well-browned on both sides and cooked through, about 6 minutes per side, or until the chicken reaches an internal temperature of 165F.
- Serve: Allow to rest for 5 minutes before slicing and serving.
Can I Make Cilantro Lime Chicken on a Grill?
Yes! It will be so delicious. Set the grill to medium high, cover with a lid, and let it warm up for 5-10 minutes. Once it’s nice and hot, add the chicken and cook for about 6 minutes per side, or until it reaches an internal temperature of 165F.

- Use fresh lime juice and cilantro! This will make a huge difference with those flavors in your chicken.
- Make sure you let your chicken rest for at least 5 minutes before slicing. This will ensure all the juices stay inside the meat.
